Sushi on the buffet is prepared in the kitchen during service, placed on the trays, and the plates are refilled as they empty. The hours are 12:00 to 17:00 every day. When you choose, leave a piece if the rice looks dry or the color looks dull. Take a piece that has just been set out and still looks moist. Taking a small portion and going back for what you liked is better than leaving a full plate on the table for a long time.
