Nigiri is a hand-shaped piece of rice with a slice of fish on top. Sake Nigiri on the Sushi & Spice menu is the example; sake here means salmon. Maki is a roll: the filling is wrapped in nori and rice, then sliced. The California Roll, Philadelphia Roll, Sake Maki and Kappa Maki are in this group. Sashimi is sliced fish without rice. The salmon sashimi bowl and the sashimi plates are this style. You can eat all three in the same meal. A comfortable order is maki first, then nigiri, then sashimi.
